Đậu hạt (Hột đậu)
Hột đậu là cây họ đậu cung cấp hạt giống để con người sử dụng. Chúng được thu hoạch khi còn khô, sau đó nấu chín, thường cần phải được ngâm lâu trong nước sôi. Chúng có nhiều carbohydrate, vitamin B và protein - thường có thể được dùng làm chất thay thế thịt trong chế độ ăn uống. Hàm lượng dầu khác nhau giữa các loại hột đậu. Nhiều loại hột đậu có chứa chất phản dinh dưỡng hoặc chất độc, cần phải được nấu chín kỹ trước khi ăn. Trong điều kiện thích hợp, chúng có thể được lưu trữ trong nhiều năm, trở thành nguồn thực phẩm an toàn có giá trị. Hầu hết các loại hột đậu nhiệt đới là cây một năm.
