Racines et tubercules

Les cultures de racines et de tubercules contiennent de grandes quantités d'amidon, qui constitue leur principale contribution au régime alimentaire. Les plantes vivaces apportent généralement des protéines au régime alimentaire ainsi que de l'amidon, bien que cela varie selon les espèces. De nombreuses racines et tubercules contiennent des substances toxiques ou antinutritionnelles et doivent être cuits avant d'être consommés.
