Proceedings from the April 26-29, 2000 workshop in Tegucigalpa, Honduras begin with a general overview of Mucuna and its food and feed uses. After that, the papers themselves appear according to the six workshop sessions: A View from the Field, Anti-Nutritional Factors in Mucuna, Mucuna as a Food, Mucuna as a Feed for Ruminants, Mucuna as a Feed for Non-Ruminants, and Potential Tools for Developing Mucuna's Food and Feed Uses. As the end of the book, there is an Agenda for Future Research and Development of Mucuna as food and feed, and draw several Conclusions.
