Recipe Instructions:

  1. Put oyster plants into boiling tomatoes and peppercorns.
  2. Stir well to cover all surfaces with acid from tomatoes; cover utensil and steam until tender or about 10 to 15 minutes.
  3. Add salt and cayenne. Taste for seasonings and serve.
  4. VARIATIONS: add chopped onion, celery and /or ripe pepper or pimento to the tomatoes.
  5. Just before serving stir in 2 tablespoons ground parsley or ½ cup cubed or grated nippy cheese; cover utensil until cheese melts.
