Recipe Instructions:

  1. Sprinkle yeast onto sugar water and wait until foamy.    
  2. Add flour and bran (if using).   Mix well and let sponge rise for 5-30 minutes.
  3. Mix in salt and oil. Add enough flour to make a smooth non-sticky dough.
  4.  Let rise until doubled in bulk, shape and let rise again.
  5. Bake.
  6. Recipe Notes:

    Up to 1/3 of the water can be omitted during step 1 and replaced with buttermilk or yogurt.

    If you use rye flour make it about 1/3 rye, 2/3 wheat.

    Or:  ½ whole wheat, ½ white four.

    Or: Add ½ cup buckwheat flour or cornmeal or oats.

    Or: add at least another ½ cup of sugar plus cinnamon, raisins, and nuts.  

    Or: add fried onions and grated cheese at step 3.
