- green jackfruit is not very palatable without cooking, but when cooked makes a nice vegetable and is often used as a vegan barbeque substitute. 

- you can often find young jackfruit canned in Asian grocery stores 

- young jackfruit is EVEN MORE latex-y than ripe jackfruit, so make sure you COAT your knife, cutting boards, and maybe even hands with oil or lard. I find thicker oils like actual lard or crisco work well. I used coconut oil the other day which was fine, but I had to keep adding it to the knife. 

- the seeds are edible! they are very tasty boiled or roasted with a big of salt, or made into hummus.
