Black Sapote: Black Sapote
(Diospyros digyna)

Black sapote is a tall, attractive evergreen tree growing to 25 m in height. It bears round green fruit up to 12 cm in diameter. The fruit is picked green when the calyx lifts away from the fruit and then it is allowed to ripen until it is brown and mushy. At this stage, it contains custard-like, dark sweet flesh which is consumed fresh or in baked goods.
