Recipe Instructions:
- Using 6 cups of water boil Potatoes for 20 minutes and then mash.
- Using 3 cups of water cook amaranth grain and then drain well.
- Add sour cream or yogurt, salt, sugar, margarine and pepper.
- Mix well and add milk to make good consistency.
- Beat until fluffy.
- Add chopped chives or green onions and amaranth.
- Place in greased casserole, top with cheese.
- Bake 20 minutes at 400 degrees.
