This East Asian food composition table is the first of a series of regional food tables in which an attempt has been made to fill in nutrient-gaps as much as possible during three years of research. It is also the first regional table which, in one single publicaiton, incudes data on amino acids, fatty acids, trace elements, certain B-vitamins, sodium and potassium. It also provides information on the inedible portion of numerous indigenous foods, increasing its usefulness in evaluation the food consumption of Asian people in this region.
