Recipe Instructions:

  1. In a saucepan, heat olive oil.
  2. Sauté garlic, shallots, leeks and celery for 5 minutes.
  3. Add rice and stir to coat the rice with oil.
  4. Add water, salt, thyme and rosemary stir and cover.
  5. Bring to a simmer and cook for 30 minutes.
  6. Add currents, walnuts, apple and tamari.
  7. Stir gently. Simmer, covered for 15 minutes.
  8. Remove from heat and let sit 10 to 15 minutes before using or serving.
